One of the perks of traveling are hotels with delicious buffets!

But if you dive in and eat EVERYTHING AVAILABLE in the buffet, EVERY SINGLE DAY while you’re away from home, you’ll find the pounds piling on quicker than you can blink…

Ok, if you are only going to be enjoying that hotel and buffet for a couple of days..then go for it! Delicious food is one of the joys in life, but if you going to be away for 3 days or more we suggest that you take it easy on some of the days…

Here’s a short video on how to pick and choose some healthy options. This is a guideline.

We don’t “count calories” and “stay away from all all the good stuff” all the time. But we do try to make healthier choices MOST of the time…

Spaghetti Squash Done Right

Wouldn’t it be awesome if we could eat a big bowl of noodles without any guilt over the excess carbs and calories? Well, nature has you covered with the perfect noodles found in spaghetti squash. These made-in-nature noodles are high in fiber and are very low in carbs and calories. So you can serve it up with your favorite sauce and enjoy pasta night your way.

Many recipes for spaghetti squash have you cut the squash in half lengthwise. This technique causes the strands to be cut in half, shortening them. The technique shown below, which involves cutting the squash into rings, allows for the noodles to maintain their length – giving you the most authentic noodle experience. Enjoy!

Servings: 4

Here’s what you need…

  • 1 spaghetti squash
  • 1 Tablespoon coconut oil
  • sea salt and black pepper
  1. Preheat the oven to 400 degrees F. Line baking sheet with parchment paper.
  2. Cut the ends off the spaghetti squash and discard. Slice the rest of the spaghetti squash into 1-inch rings. Use a spoon to remove the seeds from the center of each ring.
  3. Rub the coconut oil over all of the spaghetti squash flesh. Generously season each ring with salt and pepper. Place the rings on the parchment paper lined baking sheet and roast in the preheated oven for 30 minutes. Flip each of the rings and roast for another 30 minutes, or until very tender.
  4. Once cooled use a spoon to remove the noodles. Place all of the noodles in a large bowl and season to taste with salt and pepper. Use as a base for your favorite spaghetti sauce. Enjoy!

Nutritional Analysis: One serving equals: 61 calories, 4g fat, 7g carbohydrate, 0g sugar, 17mg sodium, 3g fiber, and 1g protein.

Tuna & Lettuce Tacos

Sometimes I’m too lazy to cook, and just want to make/eat something fast.

Tuna is the perfect choice to make a quick healthy meal. I usually  pick out white albacore packed in water. This is an ultra-healthy meal that is high in protein and low in fat.

Yield: 2 servings

Here’s what you need…

  • 1 can albacore chunk tuna, packed in water
  • 2 Tablespoons finely chopped white onion
  • 1/2 red bell pepper, finely chopped
  • 1/2 yellow bell pepper, finely chopped
  • 1/2 apple, finely chopped
  • 2 Tablespoons nonfat mayonnaise or Greek yogurt
  • 1 teaspoon dried dill
  • 4 large lettuce leaves, washed
  • Pepper to taste

  1. Combine the tuna, onion, bell pepper, and apple in a medium bowl. In a small bowl mix the mayonnaise, ranch dressing and dill.
  2. Add the mayonnaise or better Greek yogurt mixture to the tuna and mix until well combined.
  3. Arrange the lettuce leaves on two plates, and fill with tuna. Garnish with a dash of pepper.

Nutritional Analysis: One serving equals: 124 calories, 1.5g fat, 13g carbohydrate, 2.7g fiber, and 14g protein.

Big Fat Filipino Reunion 2016 (Part 2)

I know that writing about an event a month late just seems useless…

But because this blog is also my digital journal, I’m going to go ahead and tell my story regardless of whether anybody besides me (and a couple of my family members) reads this or not.

The patron of our Cortejos Clan, Tito Flips and his beautiful wife Tita Babette wanted to organize a gala ball for Christmas Eve. I think the planning and the organized started sometime in July 2016, but somehow we are all running around trying to rent/acquire suits and gowns right until the day before.

I don’t know why that always happens, but despite our disorganization everyone in the Cortejos Clan looked gorgeous and handsome and stuck to the color code each family was given.

That’s right, our “Cortejos Christmas Gala” was to have lots of food, drinks, a beautiful venue,  a couple of bartenders for the free flow bar, cool DJ’s, photographers and of course a mandatory COLOR CODED DRESS CODE per family….

It was a bit stressful, to be honest, but the family pictures that were taken were priceless…

I will make an album and link here…soon 😀

Belated (Thai) Children’s Day Thoughts…

My sister planned an AWESOME birthday party for my niece Kelsie at Zanook Aqua Park and I didn’t realize that it actually landed on Thai Children’s Day…

Seeing my 4 year old niece (she just turned 4) diving off the floats and happily sliding down a slide that was at least 10-20 meters high got me thinking and made me realize how much “growing up” has changed me.

I used to climb trees, dive off rocks and think that I could almost anything. I was, and still am, a fairly little girl, but I can remember wanting to compete with the big boys all the time and what I wanted to be (a lawyer, a doctor, an astronaut) changed  weekly. I really thought I could do ANYTHING…

What changed? I grew up and realized I couldn’t do something things. It happens to all of us, we capitalize on things that we are good at and we STOP doing the things that we aren’t good at. And slowly but surely we get more “careful” and we totally stop trying to do things that we aren’t SURE we are good at and we start unknowingly putting ourselves into a box.

My husband and I have chosen an unconventional life (selling our fitness business and driving around the world on a motorbike is fairly unconventional at least to most folks standards) and I realized that to succeed in going against the “flow” I cannot be the traditional sort of “grown up.”

I realized that I want/need that childish bravado that I used to have…

I want to stop being a grown up and be more my like my niece…

And that also got me thinking that for children to grow up brave, confident and fearless we have to make the world a safe place for them.

I think my sister Natalie and her hubby, Sam, have done an exemplary job so far…

And in honor of all the children and “children at heart” everywhere I’d like to share this music video again…

Big Fat Filipino Family Reunion 2016 (Part 1)

It’s been a long time in coming and I admit to being a prodigal daughter (grand-daughter/niece/cousin etc.)
I’m not exactly sure how long it has been, but it has been more than 10 years at least…

That’s right– I haven’t managed to attend a family reunion or visit my home town in over 10 years! I think I was a teenager when I last visited, now I’m married, had a couple career changes, lived in a couple more countries and started and sold a business.

I was a bit worried that my blood ties weren’t strong enough and that I would be a stranger in my hometown…
I mean, some of my cousins I hadn’t even met yet, and as much as I tried, I couldn’t remember all my aunts and uncles names! At least I know I have 16 aunts and uncles on my dad’s side, and another 12 on my mum’s, and I won’t even try to count all of my cousins!!!

This picture is just from my dad’s side…do you sympathize with me yet???

But as soon as the hugs started, Stefan & I received the traditional blessing from Lola I felt at ease. I wasn’t too lost or too estranged and everyone still recognized me. As prodigal as I was they still remembered that I was the first Cortejos grand-baby and that somehow gave me a warm and fuzzy feeling.

And we are a wonderfully crazy family…like seriously! It seems like we’re always eating, drinking, dancing, singing, laughing and talking really loud!!!

Fortunately my Dutch side of the family (Hubby Stefan, Mum Alice and Sister Jolanda) loved the chaos and they jumped right in madness!

Wow..it’s quite a task to go through hundreds of pictures and edit videos from a family reunion with several cameras. It makes one miss the old cameras where every picture had to count because it was expense to develop them and the roll of film was only 12-24 pics long. I was a little girl when cameras still used film rolls, but still, 24 pictures to choose from does sound lovely no?

1 hour later >>> I have been trying to pick out good pictures and edit videos, but alas hunger makes me lose focus and I find myself giggling at the funny videos without actually doing anything “edit-wise” so…

I’m off for dinner and will have to make a part 2, 3 & perhaps 4 of my Big Fat Filipino Family Reunion…

One Step Forward & Two Steps Back…

So we did it!

We shelled out quite a bit of dough and got our Redverz Atacama Motorcycle Expedition Tent. It’s even bigger and more spacious than we thought! Last night we set it up and today we spent a few hours checking out how it’d feel to be living it for a good amount of time. We even blew up our air mattresses and dug out our sleeping bags to make sure that everything fit in cozily.  You can see how huge this tent is in our picture below. Stefan at 6ft+ can easily stand in it…

Here I am snug in my Coleman cocoon sleeping bag. Ok, I lasted in it for about 3mins as our sleeping bags are rated for 5 degree weather LOL!

We couldn’t pin the tent out to it’s largest capacity, but it easily covers 3×4 meters. The front most compartment is where our motorbike panniers/gear will be stored. This allows for our “living” space to be completely mud/dirt free.

Massive and numerous ventilation openings so that it is also appropriate for hot weather. 3 pane linings for the windows and doors to block out insects, sand, cold and direct sun. It truly is an all season tent!

So that was our ONE STEP FORWARD…

Our TWO STEPS BACK experience has to do with our motorbike.

As you know from our previous post, our bike has been out of service for the past few months due to it needing a part that is currently out of stock.

We found a replacement for the part, while it is the correct part, the connection doesn’t quite fit on our bike as BMW has changed the shape of the gear shaft.

Ahhhhh!!!! >:(

Fortunately, our awesome BMW mechanic (the owner of Tart Motorrad ) is a positive guy and he figured he could do something to get the part to fit on the gear shaft. The electronic connection was all good, as our bike happily turned on when connected to it, but it really was a situation of getting the slightly “wrong” puzzle piece to fit in the puzzle…

We put our bike in his garage in the late afternoon of the 11th of November and we were hoping he could work his magic on Saturday and that we could go for a ride on Sunday…

That was not meant to be. We got a call Saturday morning that a fire broke out in his garage late Friday night and that 8 BMW GS1200 were destroyed and that our baby was damaged… Luckily, no one was hurt as it was in the middle of the night.

OH MY GOD!! Seriously, if we kept our baby for one more weekend and didn’t insist on it going into the garage on Friday in hopes of riding out on Sunday we would have missed the entire accident!

We felt horrible for ourselves and our friend. He’s been awesome during this whole ordeal and is assuring us that he will take responsibility for the damage on our bike and that our baby will be the first he will repair. He will also take responsibility for the 8 destroyed bikes while waiting for the “slow as molasses” insurance claim to be sorted out. We really do hope that he can claim insurance soon!

Seems like our bike only sustained superficial damage. But we won’t know till it is run through a full and intensive diagnostic test. High heat could also damage electronics. We’ll post an update when we know the full extent of the damage…

So that’s where we are right now. We’ve had a string of bad luck and we’re hoping that we’ll have some better news soon…

We managed to not write anything for MORE THAN A MONTH…

Shame on us!!

But anyways here’s an update…

First Big News: HRM King Bhumibol Adulyadej of Thailand, the longest reigning monarch of the world, passed away on the 13th October 2016  and we’re currently in a 30 day mourning period in Thailand. This means we are all wearing black or dark clothes to show our respect to a really amazing King and Human being and also to the Thai people, many of whom are seriously saddened by his passing. Most Thais feel like they lost their father, guardian and protector.

Just a few days ago thousands gathered to sing the Royal Anthem in honor of their late King. Having lived in Thailand off and on for the past 10 years we both share in the sadness we see around us and we can’t help but show deep respect for the life of selflessness he lived.

Setbacks…

Our poor baby won’t ride!! It’s been over 3 months now and we HAVEN’T BEEN ON A LONG RIDE anywhere…

We have an older model of the GS1200…

We’ve had many an adventure on it but a few months back we had a problem with our gear indicator. I guess the eager car washers here used a high pressure spray on it and got water into the potentiometer. It faithfully drove all the way home, but literally as soon as we drove into our garage our baby died. Anyone who has a GS1200 knows that if some little electronic thing doesn’t work, the whole bike just won’t start!!

We’ve been trying to order a new part to replace our broken one but we just found out…THEY ARE OUT OF STOCK TILL APRIL 2017!!!

Arrrrrrggggg, we can’t wait that long!! We’re desperate to go for a ride on our baby asap! So if you stumble across this blog post and you know of somewhere we can get second hand parts for a 2004 model of the GS1200 please feel free to contact us.

Shopping…

Since we can’t seem to find this much needed part, we might as well shop for other stuff for our upcoming adventure…right???

So, we figure we need a good all seasons, light weight tent specifically for motorbike travelers. We’ve set our eyes on the Redverz tent. What do you all think? It costs a pretty penny but we reckon that it might be worth it because it will be our home for possibly 50% of our travels…

Angkor Wat & Homeless on an Island…

…Cambodia Adventure Continued…

It’s really a different world in Cambodia, it’s like Thailand was perhaps 30+ years ago.

After our eventful 3rd Class train journey we were ever so happy to get into an aircon bus en route to Siem Reap.

We stayed at a cute hostel which kindly helped us organize a private tuk tuk service to the Angkor Wat sites.

Recently we learned that the Angkor Wat and the surrounding temple ruins are the largest religious monument in the world, with the site measuring 162.6 hectares. For more info check here: https://www.lonelyplanet.com/cambodia/travel-tips-and-articles/77381

Our private motorbike tricycle was happy to get going as soon as we finished breakfast. We were concerned that we would get hot, but actually the weather was quite pleasant and a bit chilly. During the 2nd day we actually brought some blankets and pillows from our hotel so we could have a cozy nap while traveling between the temple site

Wow! The ruins were more beautiful than we imagined and we wandered around taking a million pictures and exploring all the nooks and crannies we could climb onto without ruining anything.

Apparently they have found more ruins, of not just temples but of massive cities showing that the Cambodian “empire” was more vast and developed than first perceived. We probably could have stayed longer,  but after  3 days we felt that we had seen the main temple sites and decided to travel to Phnom Penh.  We heard that the best and fastest way to get there from Siem Reap was by speed boat–so off we went!

The speed boat was a fairly modern large catamaran and they an air-coned area with comfortable seats. But we opted to stay on the deck so we could enjoy the breeze, watch the fishing villages appear and disappear as we zoomed by. While we were on the deck we also thought to get some tanning in, but Stefan forgot to wear suncreen and was red as a lobster by the time we reached Phnon Penh.

Phnom Penh felt a bit more modern than Siem Reap. It’s a quaint city with a vibe especially along side the river. We enjoyed sitting in the cafes to people watch and we found that their is a lively outdoor night life. Small groups of folks were singing and dancing right along side the little stalls set up for the night market.

We didn’t stay in Phnom Penh city long as we heard that the beach town of Cambodia was Sihanoukville. To get there we rented a big bike (an old but decent Honda Super4)  and stashed our suitcases with our accommodating bike rental guy.

200+ kilometers later we found ourselves in Sihanoukville but while stopping for coffee we had seen an island off the coast and we were curious! We decided then and there to be spontaneous and head off to the island called Koh Rong http://www.kohrongisland.org/

The island looked pretty big on the map so we figured that the boat heading there would be pretty big too. We asked the captain of the boat  if we could bring the motorbike to the island and he started to laugh. Apparently the island was not very developed and that there were no roads, only dirt paths and buffalo trails to get supplies from the pier to the 5 “resorts” on the island.

We were a bit worried about our rented big bike, but we were determined to check out this “new” island so we paid a guy at the pier to take care of the bike (about 20 dollars per day)  and we jumped on the boat without a clue as to what we were going to find on this island.

We had never heard of this island before so we figured not many people had either. We just jumped on the boat and figured we would find some place to stay when we got there.

Boy, were we wrong!! The entire island was packed for the New Years holiday, even the maids rooms were rented out. As there were no roads and barely a bar of cell phone reception it was almost impossible to find out if the resorts across the island had any rooms for us.

We hung out in the bar for like 2 hours while the helpful bar staff tried to see if they could find a place for us. We also walked up and down the beach trying to find a place to stay for the night but nada…there was nothing to be found!

Out of desperation and frankly disbelief that we would be homeless for New Year’s Eve I (Marie) befriended some guys who had a diver’s bar/hangout.

I told them about how spontaneous we were that we ended up on an island without a single spare room and they laughed and told us if worse came to worse we could crash in their place as it was going to be closed that night as everyone was going to the main resort for the New Year’s Bash.

Well, it was getting dark and no one could find a place for us so we accepted that we would be sleeping behind their bar on New Year’s Eve. By now, I think everyone on the island had heard of the crazy homeless couple and the resort on the other side of the island found a spare mattress we could sleep on.  And it was no small feat getting the mattress to us, 2 teenage Cambodian guy had to trek about 2 hours following the buffalo trail to get it which made our make shift “behind the bar” accommodations that much more special!!  ?

We freshened up using a small bucket of fresh water right there on the pier. Got dressed for dinner and joined the New Year festivities.

It was a night/New Year’s to remember! –And it’s crazy experiences like these that made us realize that traveling and seeing new places is what we both love doing.

Some folks’ dream is to buy their own home, have kids or make lots of money.

We’ve found that ours is to TRAVEL and EXPERIENCE the thrill of seeing something new. Our world is so beautiful it’d be a shame not to see most of it before our time is up…

But our Koh Rong adventure didn’t end there!

The next day we heard that Survivor was being filmed on the other side of the island and we decided that we wanted to take a peek. We asked around and they said it was about 2-3 hours hike following the “red” buffalo trail through the jungle.

We set off with another couple we met on the beach earlier that day. 3-4 hours later we found that we had completely lost the “red” trail and were lucky we found a tree house bar in the middle of no where. We had some much needed water and coffee and decided that it wouldn’t be a good idea to still be wandering around when it got dark, so we started to retrace our steps.

We never did get a peek at the Survivor TV team, but we did find a most gorgeous beach. The sand was pristine white and the water was clear as glass…it was amazing!
